Gruszka, figi i nektarynka. Do góry nogami. Ciasto.


Pierwszy raz ciasto typu upside-down widziałam w jednej z pierwszych wersji australijskiego Masterchefa. Tamto, aż ociekało słodkim syropem. Ślinianki, aż wariowały na sam widok. Wyobrażam sobie, jak musieli je odbierać jurorzy. 

Długo się zastanawiałam, czy w ogóle próbować. Z moją zdolnością do pieczenia ciast (ucierane i proste z owocami się nie liczą) szansa, że za pierwszym razem się uda była niewielka. O dziwo udało się znakomicie. Cudownie wilgotne z cytrynowym posmakiem. Całości dopełnia syrop imbirowo-waniliowy. Gorąco Wam polecam na niedzielę.

Ciasto odwrócone z gruszką, figami i nektarynką z syropem imbirowym

(na 1 tortownicę o średnicy 25cm)

  • 60g light brown sugar
  • 50g butter
  • 2 tablespoons maple syrup
  • 2 pears, peeled and core removed, cut into thin slices
  • 4 large figs, quartered
  • 225g butter
  • 1 ¼ cups caster sugar
  • 4 large eggs
  • 2 tablespoons freshly grated ginger
  • ½ cup buttermilk
  • zest of 1 lemon
  • 1 ½ cups plain flour, sifted
  • ½ cup semolina
  • 2 teaspoons baking powder
Ginger syrup
  • 1 cup sugar
  • ¾ cup water
  • 2 tablespoons chopped ginger



Preheat oven to 170°C fan forced. Brush a round 20cm (base measurement) cake pan with melted butter to lightly grease. Line the base and side with non-stick baking paper. Tightly wrap the bottom of the pan with foil.
Sprinkle the brown sugar over the base of the pan. Melt 50g butter and maple syrup together in a saucepan over medium heat, whisking to combine. Pour into the cake pan. Arrange the pears in a circular pattern in the sugar mixture. Arrange the figs, cut-side down, in a circular pattern on top of the pears.
Beat the remaining butter with the caster sugar in a mixer until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in fresh ginger, buttermilk and lemon zest.
Stir dry ingredients together in a separate bowl. Add to the batter, mixing just to combine. Pour over the fruit and smooth with a spatula. Bake in preheated oven for 1 hour and 15 minutes, or until a toothpick inserted in the centre comes out clean.
Meanwhile, combine the sugar, water and ginger in a saucepan and bring to the boil over medium heat. Simmer for 30 minutes or until syrup is golden and thickens slightly. Set aside to cool slightly.
Remove the cake from the oven and cool for 10 minutes. Invert onto a plate. Serve warm or at room temperature with ginger syrup and fresh figs.

Składniki:
na ciasto:
60g brązowego cukru (użyłam Demerary)
275g masła (w temperaturze pokojowej)
2 łyżki miodu (użyłam akacjowego)
1 duża gruszka
2 dojrzałe figi
1 nektarynka
1 i 1/4 szklanki cukru pudru
4 duże jajka
2 łyżki świeżo startego korzenia imbiru
1/2 szklanki kefiru
starta skórka z 1 cytryny
1 i 1/2 szklanki mąki pszennej (typ 550)
1/2 szklanki semoliny
2 łyżeczki proszku do pieczenia

na syrop imbirowo-waniliowy:
1 szklanka białego cukru
3/4 szklanki wody
2 łyżki drobno posiekanego korzenia imbiru
ziarenka z 1/2 laski wanilii

plus
masło do wysmarowania formy

Przygotowanie:
Piekarnik rozgrzejcie do 170 stopni (górna i dolna grzałka).
Tortownicę wysmarujcie masłem. Oprószcie dno brązowym cukrem.

Na patelni rozpuśćcie miód i 50g masła. Wylejcie na dno tortownicy, na brązowy cukier.

Gruszkę pokrójcie na cienkie plasterki (3-4mm), odetnijcie gniazdo nasienne. Na podobnej grubości plasterki pokrójcie figi. Nektarynkę przekrójcie na pół, usuńcie pestkę i pokrójcie na plasterki.

Pokrojone owoce ułóżcie na dnie tortownicy. Najpierw gruszkę, następnie figi, a na końcu nektarynki.

W dużej misce zmiksujcie pozostałe masło razem z cukrem na jasną puszystą masę. Dodawajcie pojedynczo jajka, miksujcie, aż dokładnie połączą się z pozostałymi składnikami. Następnie dodajcie imbir, kefir i skórkę cytrynową, ponownie zmiksujcie. Na koniec dodajcie przesiane mąki i proszek do pieczenie. Dokładnie zmiksujcie do powstania jednolitej masy.

Przygotowane ciasto wyłóżcie na ułożone owoce. Wypełnioną tortownicę włóżcie do nagrzanego piekarnika i pieczcie przez 75 minut.

W tym czasie zajmijcie się syropem. Na patelnię wsypcie cukier, wlejcie wodę i dodajcie pokrojony imbir. Doprowadźcie do wrzenia, zmniejszcie ogień do najmniejszego i gotujcie przez 30 minut, aż syrop zgęstnieje. Pod koniec gotowania dodajcie ziarenka wanilii.

Ciasto po wyciągnięciu z piekarnika studźcie na kratce. Po 20 minutach odwróćcie do góry nogami.

Podawajcie, gdy ciasto lekko przestygnie polane syropem imbirowo-waniliowym. Smacznego!
