Jabłka i cynamon. Miód i masło. Zabawa w odwracanie.


Jeśli chcesz rozśmieszyć Boga, powiedz mu o swych planach. Jak ulał to powiedzenie do mnie dziś pasuje. Takie wielkie plany na niedzielę, upiec ciasteczka, spotkać się i pomóc koleżance, pokibicować biegnącym dziś w Warszawie, a potem pospacerować po mieście z aparatem... Aktywna niedziela się zapowiadała.

A jak wygląda realizacja? Zgoła odwrotnie. Wizyta na ostrym dyżurze i antybiotyk z samego rana, to nie jest to co planowałam :( Zdecydowanie nie. Nie mam nawet siły na upieczenie ciasteczek. Dobrze, że wczoraj od rodziców dostałam rosół na prawdziwej kurze, więc jest czym się poratować, bo nie mam siły na gotowanie. Za to na blogu nie zabraknie inspiracji, bo mam trochę przepisów w zapasie.

Jednym z takich przepisów dzielę się z Wami dziś. Ciasto upside down pierwszy raz zrobiłam kilka tygodni temu i zachwyciłam się nim. Do tego stopnia, że musiałam zrobić powtórkę. Tym razem z jabłkami, mocno pachnące cynamonem. Oddałabym dziś dużo, za kawałek takiego ciasta.



Ciasto odwrócone z jabłkami i cymanonem

(na 1 tortownicę o średnicy 25cm)

  • 60g light brown sugar
  • 50g butter
  • 2 tablespoons maple syrup
  • 2 pears, peeled and core removed, cut into thin slices
  • 4 large figs, quartered
  • 225g butter
  • 1 ¼ cups caster sugar
  • 4 large eggs
  • 2 tablespoons freshly grated ginger
  • ½ cup buttermilk
  • zest of 1 lemon
  • 1 ½ cups plain flour, sifted
  • ½ cup semolina
  • 2 teaspoons baking powder
Ginger syrup
  • 1 cup sugar
  • ¾ cup water
  • 2 tablespoons chopped ginger



Preheat oven to 170°C fan forced. Brush a round 20cm (base measurement) cake pan with melted butter to lightly grease. Line the base and side with non-stick baking paper. Tightly wrap the bottom of the pan with foil.
Sprinkle the brown sugar over the base of the pan. Melt 50g butter and maple syrup together in a saucepan over medium heat, whisking to combine. Pour into the cake pan. Arrange the pears in a circular pattern in the sugar mixture. Arrange the figs, cut-side down, in a circular pattern on top of the pears.
Beat the remaining butter with the caster sugar in a mixer until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in fresh ginger, buttermilk and lemon zest.
Stir dry ingredients together in a separate bowl. Add to the batter, mixing just to combine. Pour over the fruit and smooth with a spatula. Bake in preheated oven for 1 hour and 15 minutes, or until a toothpick inserted in the centre comes out clean.
Meanwhile, combine the sugar, water and ginger in a saucepan and bring to the boil over medium heat. Simmer for 30 minutes or until syrup is golden and thickens slightly. Set aside to cool slightly.
Remove the cake from the oven and cool for 10 minutes. Invert onto a plate. Serve warm or at room temperature with ginger syrup and fresh figs.

Składniki:
na ciasto:
5 średniej wielkości jabłek (ok. 450g)
1 łyżka cynamonu
60g brązowego cukru (użyłam Demerary)
275g masła (w temperaturze pokojowej)
2 łyżki miodu (użyłam akacjowego)
1 i 1/4 szklanki cukru pudru
4 duże jajka
1/2 szklanki kefiru
1 szklanka mąki pszennej (typ 550)
1/2 szklanki mąki pszennej razowej (typ 2000)
1/2 szklanki semoliny
2 łyżeczki proszku do pieczenia

plus
masło do wysmarowania formy

Przygotowanie:
Piekarnik rozgrzejcie do 170 stopni (górna i dolna grzałka).

Tortownicę wysmarujcie masłem. Oprószcie dno brązowym cukrem.

Na patelni rozpuśćcie miód i 50g masła. Wylejcie na dno tortownicy, na brązowy cukier.

Jabłka obierzcie, wytnijcie gniazdo nasienne, pokrójcie na większe kawałki (każde jabłko na ok. 10 części). Wrzućcie do miski, zalejcie sokiem z cytryny i oprószcie cynamonem, dokładnie wymieszajcie. Odstawcie na kilka minut. Pokrojone owoce ułóżcie na dnie tortownicy.

W dużej misce zmiksujcie pozostałe masło razem z cukrem na jasną puszystą masę. Dodawajcie pojedynczo jajka, miksujcie, aż dokładnie połączą się z pozostałymi składnikami. Następnie dodajcie kefir, ponownie zmiksujcie. Na koniec dodajcie przesiane mąki i proszek do pieczenie. Dokładnie zmiksujcie do powstania jednolitej masy.

Przygotowane ciasto wyłóżcie na ułożone owoce. Wypełnioną tortownicę włóżcie do nagrzanego piekarnika i pieczcie przez 75 minut.

Ciasto po wyciągnięciu z piekarnika studźcie na kratce. Po 20 minutach odwróćcie do góry nogami.

Podawajcie, gdy ciasto lekko przestygnie, ale jest jeszcze ciepłe. Smacznego!
